After much delay the owners of Coyote Sands plan to open the restaurant and bar mid-May.
The building, long known as Frisky’s on East River Road, has been under renovation for nearly a year.
Owner Wayne Senior said Coyote Sands will have a country and western theme with a menu that includes favorites like steaks, wings and pastas. He is also considering adding some Caribbean jerk options.
Senior received a conditional use permit to operate the business as a restaurant back in July of last year.
He was also approved for a liquor license in October. But when the restaurant did not open within 90 days of that approval, the license became void, according to City Manager Tim Cruikshank.
Senior was reapproved for an onsale intoxicating liquor license, permission to stay open until 2 a.m. and serve on Sundays by the Anoka City Council Monday.
He explained that renovating the restaurant has been a complicated process, both because of the weather and the fact that the building is put together in two pieces – one that is 50 years old and one that is 25 or 30.
As the renovations progress, Senior has been bringing the building up to code, making it ADA compliant.
Vandalism and theft of copper pipes also slowed down early stages of the renovations, Senior had told the council in the past.
